The Chemistry That Makes Spice Odor Outlast Almost Everything Else

There is a reason spice odor behaves differently from other kitchen smells, and it comes down to how little of it your nose needs. Fenugreek, which appears in a great many spice blends, contains a compound called sotolon that people can detect at concentrations measured in parts per billion. The best illustration of that is a real event. Between 2005 and 2009 Manhattan was repeatedly covered by an unexplained maple syrup smell that residents reported across the borough.
Sulfur compounds are among the most detectable substances the human nose handles. Mustard seed brings allyl isothiocyanate, cloves bring eugenol, cumin brings cuminaldehyde, and garlic contributes diallyl disulfide. Turmeric adds a different problem, because curcumin is a pigment as well as an aromatic, and it will stain grout, silicone caulk, laminate and light colored plastics yellow.
